Ingredients

  • 450 grams Button mushrooms (or cremini mushrooms)
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 3 cloves Garlic cloves, minced
  • 60 milliliters Dry sherry
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 1 tablespoon Fresh parsley, chopped (for garnish)

Directions

Step 1

Clean the mushrooms by wiping them with a damp paper towel or brushing off dirt. Trim the stems if needed and slice the mushrooms into thick slices.

Step 2

Heat a large skillet over medium heat. Add the unsalted butter and olive oil, and let the butter melt completely.

Step 3

Add the sliced mushrooms to the skillet in a single layer. Cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown.

Step 4

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Step 5

Pour in the dry sherry and stir to deglaze the skillet, scraping up any browned bits from the bottom. Allow the liquid to reduce slightly, for about 2-3 minutes.

Step 6

Sprinkle the fresh thyme, salt, and black pepper over the mushrooms. Stir well to combine and cook for an additional 2-3 minutes until the mushrooms are tender and the flavors have melded.

Step 7

Remove the skillet from heat. Taste and adjust seasoning if necessary.

Step 8

Transfer the mushrooms to a serving dish and garnish with freshly chopped parsley. Serve immediately.
