Ingredients

  • 12 oz smoked sausage (e.g., andouille or kielbasa)
  • 1 cup white or jasmine rice
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 medium bell pepper (any color), diced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup frozen peas
  • 2 stalks scallions (optional), sliced for garnish

Directions

Step 1

Slice the smoked sausage into thin rounds.

Step 2

Heat a large skillet or heavy-bottomed pot over medium heat and add 1 tablespoon of olive oil.

Step 3

Add the sausage slices to the skillet and brown them for 3-4 minutes on each side. Remove the sausage from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil, followed by the diced onion and bell pepper. Sauté for 3-4 minutes until the vegetables are softened.

Step 5

Stir in the minced garlic, paprika, dried thyme, salt, and black pepper. Cook for an additional 30 seconds until fragrant.

Step 6

Add the rice to the skillet and stir to coat it in the seasonings and oil.

Step 7

Pour in the chicken broth and return the sausage to the skillet. Stir everything together and bring to a gentle boil.

Step 8

Once boiling, reduce the heat to low, cover the skillet with a tight-fitting lid, and simmer for 15 minutes.

Step 9

After 15 minutes, stir in the frozen peas and cook for another 5 minutes, or until the rice is tender and the liquid is absorbed.

Step 10

Remove from heat and let the dish sit, covered, for 5 minutes to allow the flavors to meld.

Step 11

Fluff the rice with a fork and garnish with sliced scallions if desired. Serve warm.
