Ingredients

  • 2 pieces (6 oz each) salmon fillets (skinless)
  • 1 pack (2 sheets, thawed) frozen puff pastry sheets
  • 4 tablespoons cream cheese
  • 1 tablespoon fresh dill (finely chopped)
  • 1 teaspoon lemon juice
  • 1 cup fresh spinach leaves
  • 1 large egg
  • 1 tablespoon water
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a small bowl, mix the cream cheese, dill, lemon juice, salt, and black pepper until smooth. Set aside.

Step 3

On a lightly floured surface, unfold the puff pastry sheets and roll each sheet into a 12-inch square. Cut each square in half to make 4 smaller rectangles.

Place a salmon fillet in the center of two of the rectangles. Spread 2 tablespoons of the cream cheese mixture over each fillet, and top evenly with 1/2 cup of fresh spinach leaves.
