Ingredients

  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 large Yellow onion, diced
  • 2 Celery stalks, diced
  • 2 Carrots, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons All-purpose flour
  • 4 cups Chicken or vegetable stock
  • 3 medium Russet potatoes, peeled and diced
  • 1 pound Fresh salmon fillet, skinless and cut into 1-inch pieces
  • 1 cup Heavy cream
  • 2 tablespoons Fresh dill, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 0.5 teaspoons Paprika (optional)

Directions

Step 1

Heat a large pot over medium heat. Add the olive oil and butter, allowing the butter to melt completely.

Step 2

Add the diced onion, celery, and carrots to the pot. Sauté for 5 minutes or until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Sprinkle the flour over the vegetables and stir to coat evenly. Cook for 2 minutes, stirring constantly, to eliminate the raw flour taste.

Step 5

Gradually pour in the chicken or vegetable stock, stirring well to combine. Bring to a simmer.

Step 6

Add the diced potatoes to the pot and cook for 15 minutes, or until they are tender when pierced with a fork.

Step 7

Gently stir in the salmon pieces and let them cook for 5 to 7 minutes, or until opaque and fully cooked.

Step 8

Reduce the heat to low and stir in the heavy cream. Allow the chowder to warm through for 2 to 3 minutes.

Step 9

Season with salt, black pepper, and paprika (if using). Stir in the fresh chopped dill right before serving.

Step 10

Ladle the salmon chowder into bowls and serve warm with crusty bread or crackers on the side.
