Ingredients

  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 cup Green peas
  • 1 medium Cucumber
  • 1 cup Mayonnaise
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and dice the potatoes and carrots into small, bite-sized cubes.

In a medium-sized pot, bring water to a boil and add a pinch of salt. Cook the diced potatoes and carrots in boiling water for about 10 minutes, or until they are tender but not mushy. Drain the vegetables and let them cool completely.
