Ingredients

  • 4 medium Roma tomatoes
  • 5 Garlic cloves
  • 0.5 medium White onion
  • 0.5 cup Fresh cilantro
  • 1 medium Jalapeño pepper
  • 2 tablespoons Fresh lime juice
  • 0.5 teaspoon Salt
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the garlic cloves (with peels on) on a small piece of aluminum foil. Drizzle with olive oil and wrap the foil tightly into a pouch.

Step 3

Place the foil pouch on a baking sheet and roast the garlic in the oven for 10 minutes or until softened and fragrant. Let it cool before handling.

Step 4

While the garlic roasts, dice the Roma tomatoes, half of the onion, and the jalapeño pepper (remove seeds for less heat if desired). Chop the cilantro finely.

Step 5

Once the garlic has cooled, squeeze the roasted cloves out of their peels and mash them with the back of a spoon or fork.

Step 6

In a mixing bowl, combine the diced tomatoes, onion, jalapeño, cilantro, roasted garlic, lime juice, and salt. Stir well to distribute the flavors evenly.

Step 7

Taste the salsa and adjust the salt or lime juice to your preference.

Step 8

Serve immediately with tortilla chips or as a topping. Store leftovers in an airtight container in the refrigerator for up to 3 days.
