Ingredients

  • 120 g All-purpose flour
  • 100 g Old-fashioned oats
  • 100 g Brown sugar
  • 115 g Unsalted butter
  • 1 pinch Salt
  • 1 tsp Vanilla extract
  • 180 g Raspberry jam

Directions

Step 1

Preheat your oven to 175°C (350°F). Line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving a slight overhang on the sides for easy removal.

Step 2

In a large mixing bowl, combine the flour, oats, brown sugar, and a pinch of salt. Mix until evenly distributed.

Step 3

Melt the butter in a small saucepan or in the microwave, then pour it over the dry ingredients. Add the vanilla extract and stir everything together until the mixture becomes crumbly but holds together when pressed.

Step 4

Press two-thirds of the mixture evenly into the prepared pan to form the base layer. Use the back of a spoon or your hands to press it firmly into place.

Step 5

Spread the raspberry jam evenly over the base layer, leaving a small margin around the edges to prevent sticking.

Step 6

Sprinkle the remaining oat mixture on top of the jam, gently pressing it down to create the crumbly topping.

Step 7

Bake in the preheated oven for 30–35 minutes, or until the top is golden brown and the jam is gently bubbling.

Step 8

Remove from the oven and allow the bars to cool completely in the pan. For easier slicing, you can chill them in the fridge for about an hour.

Step 9

Once cool, lift the bars out of the pan using the parchment paper overhang. Cut into 9 equal squares and serve. Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
