Ingredients

  • 1 medium Russet potato (peeled and cubed)
  • 1.5 cups Water
  • 2.25 teaspoons Active dry yeast
  • 0.25 cup Granulated sugar
  • 0.25 cup Unsalted butter (melted)
  • 0.5 cup Milk
  • 2 large Eggs (lightly beaten)
  • 4.5 cups All-purpose flour
  • 1 teaspoon Salt

Directions

Step 1

Place the cubed potato in a small saucepan and cover it with water. Bring to a boil and cook until the potato is fork-tender, about 10-12 minutes. Drain the potato, reserving 1 cup of the cooking water, and mash the potato until smooth. Let both the mashed potato and the reserved water cool to lukewarm.

Step 2

In a large mixing bowl, combine the lukewarm reserved potato water and granulated sugar. Sprinkle the active dry yeast over the top and let it sit for 5-10 minutes until foamy.

Step 3

Add the mashed potato, melted butter, milk, and eggs to the yeast mixture. Stir until well combined.

Step 4

Gradually add the all-purpose flour and salt, mixing until a soft dough forms.

Step 5

Turn the dough out onto a lightly floured surface and knead for about 8 minutes until the dough is smooth and elastic. Alternatively, use a stand mixer with the dough hook attachment for 5-6 minutes on medium speed.

Step 6

Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Step 7

Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place the dough balls onto a greased or parchment-lined baking sheet, spacing them evenly.

Step 8

Cover the rolls with a towel and let them rise again for 30-40 minutes until puffy.

Step 9

Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes or until golden brown on top.

Step 10

Remove the rolls from the oven and brush with additional melted butter, if desired. Let them cool slightly before serving. Enjoy!
