Ingredients

  • 4 pieces Pork chops
  • 4 medium Russet potatoes
  • 3 medium Carrots
  • 1 large Yellow onion
  • 2 tablespoons Olive oil
  • 2 teaspoons Minced garlic
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 cup Chicken broth
  • 0.5 cup Grated Parmesan

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a large baking dish with a drizzle of olive oil and set aside.

Step 2

Peel the potatoes and carrots, then cut them into 1-inch chunks. Thinly slice the onion. Spread the vegetables evenly in the prepared baking dish.

Step 3

Drizzle 1 tablespoon of olive oil over the vegetables and season with 0.5 teaspoons of salt, 0.5 teaspoons of black pepper, and 0.5 teaspoons of dried thyme. Toss to coat.

Step 4

Rub the pork chops with the remaining olive oil, minced garlic, paprika, and remaining salt and pepper. Place the pork chops on top of the vegetables in the baking dish.
