Ingredients

  • 115 grams Unsalted butter, softened
  • 500 grams Powdered sugar
  • 60 ml Crushed pineapple, drained
  • 2 tablespoons Pineapple juice, reserved from the crushed pineapple
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Using a hand mixer or a stand mixer with the paddle attachment, beat the softened butter on medium speed until smooth and creamy, about 2-3 minutes.

Step 2

Gradually add the powdered sugar, one cup at a time, mixing on low speed after each addition. This will help prevent the powdered sugar from puffing out of the bowl.

Step 3

Once all the powdered sugar has been incorporated, beat the mixture on medium speed for about 1 minute until the texture is fluffy.

Step 4

Add the drained crushed pineapple, pineapple juice, vanilla extract, and a pinch of salt to the bowl.

Step 5

Mix the icing on low speed at first to combine, then increase to medium speed and beat for another 1-2 minutes until smooth and well blended.

Step 6

If the icing is too thin, add more powdered sugar, a tablespoon at a time, until the desired consistency is reached. If the icing is too thick, add a small amount of pineapple juice to thin it out.

Step 7

Use immediately to frost cakes, cupcakes, or cookies. If not using immediately, store in an airtight container in the refrigerator for up to 3 days. Allow the icing to come to room temperature and remix before using.
