Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic cloves, minced
  • 1 medium red bell pepper, finely diced
  • 1 14 oz can diced tomatoes (canned)
  • 2 tbsp tomato paste
  • 0.5 cup beef broth
  • 0.5 cup green olives, sliced
  • 0.25 cup raisins
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 bay leaf
  • 2 tbsp fresh cilantro, chopped (optional, for garnish)
  • 4 cups cooked white rice (for serving)

Directions

Step 1

In a large skillet or sauté pan, heat the olive oil over medium heat.

Step 2

Add the diced onion and cook for 2-3 minutes until softened. Stir in the minced garlic and red bell pepper, cooking for another 2 minutes.

Push the vegetables to the side of the skillet and add the ground beef. Cook, breaking it up with a spoon, until browned and no longer pink, about 5 minutes.
