Ingredients

  • 3 whole lemons (zested and juiced)
  • 150 g granulated sugar (for filling)
  • 3 whole eggs
  • 100 ml heavy cream
  • 1 tbsp powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

To make the crust, combine the all-purpose flour and sugar in a large mixing bowl.

Add the cold, cubed butter into the flour mixture and rub it in with your fingers until it resembles coarse crumbs.

Mix in the egg yolk and cold water until the dough comes together. Shape it into a disc, wrap it in plastic wrap, and refrigerate for 15 minutes.
