  • 3 pounds beef chuck roast
  • 1 large yellow onion
  • 3 pieces garlic cloves
  • 2 cups beef broth
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 325°F (163°C).

Pat the beef chuck roast dry with paper towels and season both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Heat 2 tablespoons of olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the roast for 3-4 minutes per side until browned. Remove the beef and set it aside.
