Ingredients

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 0.333 cup water
  • 9 medium-sized flour tortillas
  • 1 15-ounce can, drained and rinsed black beans
  • 1 cup frozen corn
  • 2 cups salsa
  • 2 cups shredded Mexican blend cheese
  • 0.5 cup (optional, for serving) sour cream
  • 0.25 cup (optional, for garnish) chopped fresh cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

Step 3

Stir in the taco seasoning and water, mixing well to coat the beef. Let it simmer for 1-2 minutes, then remove from heat.

Step 4

Place 3 tortillas on the bottom of the prepared baking dish, slightly overlapping to cover the surface.

Step 5

Spread 1/3 of the ground beef mixture over the tortillas, followed by 1/3 of the black beans, 1/3 of the corn, 1/3 of the salsa, and 1/3 of the shredded cheese.

Step 6

Repeat the layering process two more times: tortillas, beef mixture, black beans, corn, salsa, and cheese.

Step 7

Cover the baking dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 5 minutes to melt and lightly brown the cheese.

Step 8

Remove the lasagna from the oven and let it rest for 5 minutes before slicing.

Step 9

Serve warm with sour cream and garnish with fresh cilantro, if desired. Enjoy your Easy Mexican Lasagna!
