  • 1 lb ground beef (80% lean)
  • 0.5 cup breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp dried oregano

  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 2 cups marinara sauce
  • 4 sub rolls
  • 1 cup shredded mozzarella cheese
  • 2 tbsp butter
  • 1 clove garlic (minced)
  • 2 tbsp fresh parsley (chopped)

Directions

Step 1

In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, oregano, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.

Step 2

Roll the mixture into evenly sized meatballs, about 1.5 inches in diameter. This should yield 12-16 meatballs.

Step 3

Heat olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides. This should take about 8-10 minutes.

Reduce the heat to low and pour marinara sauce over the meatballs. Cover the skillet and let simmer for 15 minutes, or until the meatballs are cooked through.
