Ingredients

  • 1 approximately 4 lbs Whole chicken
  • 2 Lime
  • 1 cup Fresh basil leaves
  • 3 tablespoons Olive oil
  • 4 Garlic cloves, minced
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper, freshly ground
  • 1 teaspoon Paprika
  • 2 tablespoons Unsalted butter

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Rinse the whole chicken under cold running water and pat it dry with paper towels. Remove any giblets if included.

Step 3

In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, paprika, and the zest of one lime.

Step 4

Gently loosen the skin of the chicken by sliding your fingers underneath it, being careful not to tear it. Spread half of the seasoned olive oil mixture under the skin, and rub the remaining mixture all over the outside of the chicken.

Cut one lime into quarters and stuff it along with the butter and half of the fresh basil leaves into the cavity of the chicken.

Tie the chicken legs together with kitchen twine and tuck the wings under the bird to ensure even cooking.

Place the chicken in a roasting pan or a cast-iron skillet, breast-side up.
