Ingredients

  • 1 cup dry green or brown lentils
  • 2.5 cups water
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons taco seasoning
  • 2 tablespoons tomato paste
  • 0.5 cup vegetable broth (optional)
  • 8 small tortillas
  • 1 cup shredded lettuce (optional)
  • 1 cup diced tomatoes (optional)
  • 0.5 cup shredded cheese or dairy-free alternative (optional)
  • 0.25 cup sour cream or dairy-free alternative (optional)
  • 1 sliced avocado (optional)
  • 1 serving hot sauce (optional)

Directions

Step 1

Rinse the lentils thoroughly under cold water and drain.

Step 2

In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce the heat to low, cover, and let simmer for about 20 minutes or until the lentils are tender and most of the liquid is absorbed. Drain any excess liquid, if necessary.

Step 3

While the lentils are cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

Step 4

Add the minced garlic to the skillet and cook for another 1 minute, stirring frequently, until fragrant.

Step 5

Stir in the cooked lentils, taco seasoning, and tomato paste. Mix well to evenly coat the lentils with the seasoning.

Step 6

If the mixture seems too thick, stir in the vegetable broth a little at a time until you reach your desired consistency. Cook for another 3-4 minutes to allow the flavors to meld.

Step 7

Warm the tortillas in a dry skillet or microwave according to package instructions.

Step 8

Spoon the lentil mixture onto the tortillas and add your favorite toppings, such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, avocado slices, and hot sauce.

Step 9

Serve immediately and enjoy your Easy Lentil Tacos!
