Ingredients

  • 200 grams all-purpose flour
  • 100 grams unsalted butter (cold, cubed)
  • 50 grams powdered sugar
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 3 large eggs
  • 150 grams granulated sugar
  • 100 milliliters heavy cream
  • 2 large lemons (zested and juiced)
  • 1 tablespoon powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold, cubed butter and rub it into the flour mixture with your fingers until it resembles fine breadcrumbs.

Step 3

Add the egg yolk and cold water to the mixture, and gently knead until the dough comes together. Form the dough into a flat disc, wrap it in plastic wrap, and refrigerate for 15 minutes.

Step 4

Lightly flour a surface and roll out the chilled dough to fit a 9-inch tart tin. Press the dough into the tin and trim the edges. Prick the base with a fork and place it back in the fridge for 10 minutes.

Line the tart shell with parchment paper and fill it with baking beans or pie weights. Bake for 15 minutes, then remove the weights and paper and bake for another 10 minutes until lightly golden. Remove from the oven and allow to cool.

Pour the lemon mixture into the cooled tart shell. Bake at 180°C (350°F) for 20-25 minutes, or until the filling is set but still slightly wobbly in the center.

Remove the tart from the oven and allow it to cool to room temperature. Chill in the refrigerator for at least 1 hour before serving.
