Ingredients

  • 4 cups Cooked shredded chicken
  • 10 pieces Corn tortillas
  • 1 can (10.5 oz) Cream of chicken soup
  • 1 can (10.5 oz) Cream of mushroom soup
  • 1 can (10 oz) Diced tomatoes with green chilies (Rotel)
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 3 cups Shredded cheddar cheese
  • 2 teaspoons Butter or cooking spray
  • 1 cup Chopped onion
  • 1 cup Chopped bell pepper (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray and set aside.

Step 2

In a large skillet over medium heat, sauté the chopped onion and bell pepper (if using) until softened, about 3–5 minutes.

In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies (including juice), chili powder, garlic powder, and onion powder. Stir until fully mixed.

Cut the corn tortillas into quarters to make them easier to layer.
