Ingredients

  • 3 cups Cooked shredded chicken
  • 12 pieces Corn tortillas
  • 2 cups Cheddar cheese, shredded
  • 1 can (10.5 oz) Cream of chicken soup
  • 1 can (10.5 oz) Cream of mushroom soup
  • 1 can (10 oz) Diced tomatoes with green chilies (e.g., Rotel)
  • 0.5 cup Chicken broth
  • 1 cup Onion, diced
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 tablespoon Vegetable oil

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Heat the vegetable oil in a skillet over medium heat. Sauté the diced onion until softened, about 3-5 minutes.

Step 3

In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies (undrained), chicken broth, garlic powder, chili powder, and cumin. Mix well to form a creamy sauce.

Step 4

Add the sautéed onion and shredded chicken to the bowl with the sauce. Stir until everything is evenly combined.

Step 5

Lightly grease a 9x13-inch baking dish. Spread a thin layer of the chicken mixture on the bottom of the dish.

Step 6

Cut the corn tortillas into quarters. Layer one-third of the tortillas over the chicken mixture, followed by one-third of the remaining chicken mixture and one-third of the shredded cheese. Repeat this layering process two more times (tortillas, chicken mixture, cheese), finishing with a layer of cheese on top.

Step 7

Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes.

Step 8

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 9

Let the casserole cool for 5 minutes before serving. Enjoy!
