  • 3 pounds Beef chuck roast

  • 4 sprigs Fresh thyme
  • 1 Scotch bonnet pepper
  • 1 Large onion, chopped
  • 4 Garlic cloves, minced
  • 3 Carrots, peeled and chopped
  • 4 Potatoes, peeled and quartered
  • 3 cups Beef broth
  • 2 tablespoons Soy sauce
  • 2 tablespoons Tomato paste
  • 2 tablespoons Vegetable oil

Directions

Step 1

Season the beef chuck roast with salt, black pepper, garlic powder, onion powder, allspice, and paprika. Rub the seasoning into the meat and set aside for 10 minutes.

Step 2

Heat the vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat.

Step 3

Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.
