Ingredients

  • 115 g unsalted butter
  • 100 g brown sugar
  • 1 tsp vanilla extract
  • 125 g all-purpose flour
  • 150 g rolled oats
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 250 g your favorite jam (e.g., raspberry, strawberry, or apricot)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

Step 2

In a large mixing bowl, melt the butter either in the microwave or over low heat on the stovetop.

Step 3

Whisk the melted butter with the brown sugar and vanilla extract until the mixture is smooth and well combined.

Step 4

Add the flour, rolled oats, baking powder, and salt to the bowl. Stir until the ingredients form a crumbly mixture.

Set aside approximately 1/3 of the oat mixture for the topping, and press the remaining 2/3 evenly into the bottom of the prepared baking pan using your hands or the back of a spoon.
