Ingredients

  • 12 oz Rotini pasta
  • 1.5 cups Cherry tomatoes
  • 1 large Cucumber
  • 1 Red bell pepper
  • 0.5 Red onion
  • 1 cup Black olives
  • 1 cup Mozzarella cheese (cubed)

  • 1 cup Italian dressing
  • 0.25 cup Grated Parmesan cheese
  • 2 tbsp Fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
