Ingredients

  • 4 pieces beef filets (approximately 6 oz each, 1-inch thick)

  • 2 tablespoons dry white wine
  • 4 slices prosciutto
  • 1 sheet puff pastry, thawed
  • 1 large egg yolk
  • 1 teaspoon water
  • 1 tablespoon all-purpose flour (for dusting)

Directions

Step 1

Season the beef filets generously with salt and pepper on all sides.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the filets for 1-2 minutes on each side until browned. Remove from the skillet and set aside to cool.

In the same skillet, heat the remaining 1 tablespoon of olive oil and butter over medium heat. Add the finely chopped mushrooms, shallot, and thyme. Cook, stirring occasionally, for 8-10 minutes or until the moisture evaporates and the mixture becomes a paste-like consistency.
