Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and diced
  • 2 medium russet potatoes, peeled and diced
  • 2 celery stalks, diced
  • 14.5 ounces canned diced tomatoes (with juice)
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the olive oil, and then the ground beef. Cook the beef, breaking it into smaller pieces with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Drain any excess fat, if necessary.

Step 2

Add the diced onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.

Step 3

Stir in the diced carrots, potatoes, and celery. Cook for another 5 minutes, stirring occasionally.

Step 4

Add the canned diced tomatoes (with their juice), beef broth, salt, black pepper, thyme, paprika, and the bay leaf. Stir everything together and bring the mixture to a boil over high heat.

Step 5

Once boiling, reduce the heat to low and cover the pot with a lid. Let the stew simmer for 25-30 minutes, or until the potatoes and carrots are fork-tender.

Step 6

Remove the lid and stir in the frozen peas. Let the stew simmer for another 5 minutes to heat the peas through.

Step 7

Taste the stew and adjust seasoning if needed. Remove and discard the bay leaf before serving.

Step 8

Ladle the stew into bowls and serve warm with crusty bread or crackers, if desired.
