Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 2 medium potatoes, peeled and diced
  • 15 ounces diced tomatoes (canned, with juices)
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground beef and cook, breaking it up with a wooden spoon, until browned, about 5-7 minutes. Drain any excess fat if necessary.

Step 3

Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes until softened and fragrant.

Step 4

Stir in the carrots, celery, and potatoes. Cook for another 3-4 minutes, stirring occasionally.

Step 5

Add the canned diced tomatoes (with their juices), tomato paste, and beef broth to the pot. Stir well to combine.

Step 6

Mix in the Italian seasoning, paprika, salt, and black pepper.

Step 7

Bring the soup to a boil, then reduce the heat to low. Cover the pot and simmer for 20 minutes or until the vegetables are tender.

Step 8

Once the vegetables are cooked, stir in the frozen mixed vegetables. Simmer for an additional 5 minutes until they are heated through.

Step 9

Taste and adjust seasoning if needed. Serve hot with crusty bread or crackers.
