Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cups ham, diced (fully cooked)
  • 2 15-ounce cans canned white beans, drained and rinsed
  • 6 cups chicken or vegetable broth
  • 1 piece bay leaf
  • 1 teaspoon fresh thyme leaves (or dried thyme)
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 cup parsley, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the diced ham to the pot and stir to combine with the vegetables.

Add the drained and rinsed white beans, chicken or vegetable broth, bay leaf, and thyme to the pot. Stir well.
