Ingredients

  • 200 grams green chillies
  • 3 pieces garlic cloves
  • 60 ml white vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 60 ml water
  • 1 tablespoon lime juice

Directions

Step 1

Wash the green chillies thoroughly and pat them dry. Remove the stems and roughly chop the chillies.

Step 2

Peel the garlic cloves and set them aside.

Step 3

In a small saucepan over medium heat, combine the white vinegar, water, sugar, and salt. Stir until the sugar and salt dissolve completely. Remove from heat and let the mixture cool slightly.

Step 4

In a blender or food processor, add the chopped chillies, garlic cloves, olive oil, and the vinegar mixture. Blend until you achieve a slightly chunky or smooth consistency, depending on your preference.

Step 5

Transfer the blended relish back to the saucepan and cook over low heat for about 5 minutes, stirring frequently to enhance the flavors.

Step 6

Remove the saucepan from heat and stir in the lime juice. Allow the relish to cool completely before transferring it to a sterilized jar or container.

Step 7

Store the green chilli relish in the refrigerator for up to 2 weeks. Use as a condiment or to spice up your favorite dishes.
