Ingredients

  • 4 pieces lamb chops
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons cinnamon
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 0.5 cups unsweetened apple juice
  • 0.5 cups dried apricots, diced
  • 0.25 cups golden raisins
  • 1 teaspoon fresh rosemary, chopped

Directions

Step 1

Season the lamb chops with salt, black pepper, and cinnamon on both sides, and set aside.

Step 2

In a large skillet, heat the olive oil over medium-high heat until shimmering.

Step 3

Add the lamb chops to the skillet and sear for 3-4 minutes on each side, or until they develop a golden-brown crust. Reduce the heat if necessary to avoid burning. Remove the chops to a plate and tent with foil to keep warm.

Step 4

In the same skillet, lower the heat to medium and add the honey and balsamic vinegar, stirring to combine and deglaze the pan.

Step 5

Pour in the apple juice and stir, scraping up any browned bits from the bottom of the skillet to incorporate into the sauce.

Step 6

Add the diced apricots, golden raisins, and chopped rosemary to the skillet. Simmer for 5-7 minutes, or until the fruit softens and the sauce reduces slightly.

Step 7

Return the lamb chops to the skillet, spooning some of the fruit sauce over them. Simmer for an additional 3-5 minutes, or until the lamb chops are cooked to your desired level of doneness (internal temperature of 145°F for medium-rare).

Step 8

Remove the lamb chops from the skillet and let them rest for 5 minutes. Serve warm, topped with the fruit sauce.
