Ingredients

  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 60 grams unsalted butter, cold and cubed
  • 2 tablespoons granulated sugar
  • 150 milliliters whole milk
  • 1 large egg, beaten (for glaze)
  • 1 pinch salt

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking powder, and salt.

Step 3

Add the cold, cubed butter to the flour mixture. Using your fingers, rub the butter into the flour until the mixture resembles breadcrumbs.

Step 4

Stir in the granulated sugar until evenly combined.

Step 5

Make a well in the center and pour in the milk. Mix gently with a fork or a knife until the dough just comes together. Avoid overmixing to keep the scones light and fluffy.

Step 6

Turn the dough out onto a floured surface and knead very lightly, just enough to bring the dough together.

Step 7

Roll or gently pat the dough to about 2.5 cm (1 inch) thick. Using a round cutter (approximately 5 cm or 2 inches in diameter), cut out scones and place them on the prepared baking tray. Re-roll any remaining dough and repeat the cutting process.

Step 8

Brush the tops of the scones with the beaten egg to create a golden glaze during baking.

Step 9

Bake the scones in the preheated oven for 10-12 minutes, or until they are well-risen and golden brown.

Step 10

Remove from the oven and allow to cool slightly on a wire rack before serving.

Step 11

Serve the scones warm with clotted cream and jam for a traditional English teatime treat.
