Ingredients

  • 1 pound Ground beef
  • 1 packet Taco seasoning
  • 8 Flour tortillas
  • 1 can Refried beans
  • 2 cups Red enchilada sauce
  • 2 cups Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 0.25 cup Sliced black olives (optional)
  • 0.25 cup Chopped green onions (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it into small crumbles as it cooks. Drain any excess grease.

Step 3

Stir in the taco seasoning along with the amount of water specified on the packet. Simmer for 2-3 minutes, then remove from heat.

Step 4

Warm the refried beans in a small saucepan or microwave until spreadable.

Step 5

Lay a flour tortilla on a clean surface. Spread 2-3 tablespoons of refried beans in the center of the tortilla. Add a layer of the seasoned ground beef (about 2-3 tablespoons), and top with a sprinkling of shredded cheese.

Step 6

Roll the tortilla tightly, tucking in the ends, and place it seam-side down in a greased 9x13-inch baking dish. Repeat with the remaining tortillas.

Step 7

Pour the enchilada sauce evenly over the rolled tortillas, ensuring they are fully covered.

Step 8

Sprinkle the remaining cheddar cheese over the top of the dish.

Step 9

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbling.

Step 10

Remove from the oven and let cool for 5 minutes. Garnish with sour cream, black olives, and green onions before serving, if desired.
