Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.5 cup granulated sugar
  • 4 large egg yolks

  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cinnamon
  • 0.5 cup bourbon or spiced rum (optional)
  • 1 pinch extra ground nutmeg (for garnish)

Directions

Step 1

In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Warm over medium heat, stirring occasionally, until the sugar dissolves completely. Do not let the mixture boil.

Step 2

In a separate large bowl, whisk the egg yolks until they become pale and slightly frothy.

Step 3

Slowly pour a small amount of the warm milk mixture into the egg yolks while whisking constantly to temper the eggs. Gradually add more of the milk mixture, continuing to whisk, until fully combined.

Step 4

Pour the tempered egg and milk mixture back into the saucepan. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (approximately 160°F or 70°C). Do not allow it to boil, as this will scramble the eggs.

Step 5

Remove the saucepan from heat and stir in the vanilla extract, ground nutmeg, ground cinnamon, and optional bourbon or spiced rum, if using. Mix well.

Step 6

Allow the eggnog to cool slightly, then transfer it to a pitcher or container. Cover and refrigerate for at least 1 hour or until chilled.
