  • 8 slices thick-cut bacon
  • 6 links sausages (preferably Irish-style)
  • 2 large yellow onions
  • 4 medium russet potatoes
  • 2 cloves garlic
  • 4 cups chicken broth
  • 2 tablespoons fresh parsley

  • 0.5 teaspoon black pepper

Directions

Step 1

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon, drain on a paper towel-lined plate, and set aside. Reserve about 2 tablespoons of the bacon grease in the skillet.

In the same skillet, brown the sausages on all sides over medium heat for about 5-7 minutes. They do not need to be fully cooked through at this point. Remove and set aside.
