Ingredients

  • 6 large Eggs
  • 4 tablespoons Mayonnaise
  • 1 teaspoon Yellow mustard
  • 1 tablespoon Sweet pickle relish
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Paprika
  • 8 Bread slices
  • 4 Lettuce leaves

Directions

Step 1

Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat, then turn off the heat and cover the saucepan. Let the eggs sit in the hot water for 10 minutes.

Step 2

Drain the hot water and transfer the eggs to a bowl of ice water. Let them cool for 5 minutes to make peeling easier.

Step 3

Peel the eggs and place them in a medium-sized mixing bowl. Use a fork to mash the eggs into small crumbles.

Step 4

Add the mayonnaise, yellow mustard, sweet pickle relish, salt, black pepper, and paprika to the mashed eggs. Stir until the mixture is smooth and evenly combined.

Step 5

Taste the mixture and adjust the seasoning with additional salt or pepper, if needed.

Step 6

Lay out the bread slices and divide the egg filling evenly among 4 of the slices. Spread the mixture to the edges.

Step 7

Top each sandwich with a lettuce leaf, then place another slice of bread on top to complete the sandwich.

Step 8

Cut the sandwiches in half, if desired, and serve immediately. Enjoy!
