Ingredients

  • 3 pounds pork shoulder roast
  • 2 tablespoons olive oil
  • 1 large onion

  • 1 cup chicken broth
  • 4 medium carrots
  • 4 medium potatoes

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Season the pork shoulder roast with salt, black pepper, dried thyme, and dried rosemary.

Sear the pork roast on all sides in the hot skillet until golden brown, about 2-3 minutes per side. Remove from heat.
