Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 whole garlic cloves, minced
  • 28 oz diced tomatoes, undrained
  • 15 oz kidney beans, drained and rinsed
  • 15 oz black beans, drained and rinsed
  • 15 oz tomato sauce
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper (optional, for heat)
  • 1 cup beef broth

Directions

Step 1

In a large skillet over medium heat, brown the ground beef until cooked through. Drain excess grease and set aside.

Step 2

In the same skillet, sauté the diced onion until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute. Remove from heat.

Step 3

In a 6-quart Crock Pot or slow cooker, add the cooked ground beef and onion-garlic mixture.

Step 4

Add the diced tomatoes (including their juices), kidney beans, black beans, tomato sauce, and beef broth to the Crock Pot.

Step 5

Sprinkle in the chili powder, ground cumin, paprika, dried oregano, salt, black pepper, and cayenne pepper if using. Stir well to combine all the ingredients.

Step 6

Cover the Crock Pot with its lid and set it to cook on LOW heat for 6-8 hours or HIGH heat for 3-4 hours.

Step 7

Once the cooking time is complete, give the chili a good stir. Taste and adjust seasoning if needed.

Step 8

Serve hot with your favorite toppings, such as shredded cheese, sour cream, chopped green onions, or crumbled tortilla chips.
