Ingredients

  • 2 pounds Beef stew meat
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 4 medium Carrots, peeled and sliced into rounds
  • 8 ounces Baby bella mushrooms, halved or quartered
  • 1 cup Dry red wine (e.g., Burgundy or Pinot Noir)
  • 2 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 leaf Bay leaf
  • 4 sprigs Fresh thyme
  • 2 tablespoons Parsley, chopped (optional, for garnish)
  • 1 package Egg noodles or mashed potatoes (optional, for serving)

Directions

Step 1

Season the beef stew meat with salt and pepper. Toss with all-purpose flour until evenly coated.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides. Transfer the beef to the crock pot.

Step 3

In the same skillet, add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Transfer the onions and garlic to the crock pot. Add the carrots and mushrooms on top.

Step 5

In a separate bowl, mix the red wine, beef broth, tomato paste, bay leaf, and thyme sprigs. Pour this mixture over the ingredients in the crock pot.

Step 6

Cover the crock pot with the lid and cook on low heat for 8 hours or on high heat for 4 hours, until the beef is tender and the flavors are well combined.

Step 7

Remove the bay leaf and thyme sprigs before serving. Taste and adjust seasoning with additional salt and pepper if needed.

Step 8

Serve hot over egg noodles or mashed potatoes, if desired. Garnish with chopped parsley for a fresh touch.
