Ingredients

  • 2 cups Heavy cream
  • 0.5 cup Granulated sugar
  • 4 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 0.125 teaspoon Salt
  • 0.25 cup Granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil. Remove from heat.

Step 3

In a mixing bowl, whisk together the egg yolks, 0.5 cup sugar, vanilla extract, and salt until the mixture thickens and is pale in color.

Step 4

Slowly pour the warm cream into the egg mixture while continuously whisking to temper the eggs. This prevents the eggs from curdling.

Step 5

Strain the custard mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps or egg solids.

Step 6

Divide the mixture evenly among 4 oven-safe ramekins.

Step 7

Place the ramekins in a deep baking dish or roasting pan. Pour hot water into the pan until it reaches halfway up the sides of the ramekins, creating a water bath.

Step 8

Carefully transfer the pan to the preheated oven and bake for 40-45 minutes, or until the custard is set but still slightly jiggly in the center.

Step 9

Remove the ramekins from the water bath and let them cool to room temperature. Then cover with plastic wrap and refrigerate for at least 4 hours, or overnight.

Step 10

When ready to serve, sprinkle about 1 tablespoon of granulated sugar evenly over the top of each custard.

Step 11

Using a kitchen torch, caramelize the sugar by moving the flame in small circles until it melts and forms a golden-brown crust. Alternatively, you can place the ramekins under a broiler for 1-2 minutes, watching closely to prevent burning.

Step 12

Allow the sugar crust to cool for a minute before serving. Enjoy your creamy and crunchy creme brulee!
