Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 1 large potato, peeled and diced
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Directions

Step 1

In a large pot, heat the butter and olive oil over medium heat until the butter is melted.

Step 2

Add the diced onion and cook for about 3-4 minutes until it becomes soft and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the diced carrots, celery, potato, and broccoli to the pot. Stir to combine and let the vegetables cook for 5 minutes, stirring occasionally.

Step 5

Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes or until the vegetables are tender.

Step 6

Remove the pot from the heat. Use an immersion blender to puree the soup until smooth, or transfer the soup in batches to a blender to blend.

Step 7

Stir in the heavy cream, salt, and black pepper. Return the pot to low heat and cook for an additional 5 minutes, stirring occasionally.

Step 8

Taste the soup and adjust seasoning if needed.

Step 9

Serve hot, garnished with chopped fresh parsley if desired.
