Ingredients

  • 1 medium Cauliflower head
  • 1 medium Yellow onion
  • 3 Garlic cloves
  • 2 tablespoons Olive oil
  • 4 cups Vegetable broth
  • 0.5 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Ground nutmeg
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Cut the cauliflower into florets and discard the tough central stem.

Step 2

Peel and dice the yellow onion. Mince the garlic cloves.

Step 3

In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.

Step 4

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 5

Add the cauliflower florets to the pot, followed by the vegetable broth. Bring to a boil, then reduce the heat to a simmer. Cover the pot and cook for 20 minutes, or until the cauliflower is fork-tender.

Step 6

Using an immersion blender, carefully blend the soup directly in the pot until smooth. Alternatively, you can blend the soup in batches using a countertop blender, then return it to the pot.

Step 7

Stir in the heavy cream, salt, black pepper, and ground nutmeg. Cook for another 5 minutes over low heat to heat through and meld the flavors.

Step 8

Taste and adjust the seasonings, adding more salt or pepper if needed.

Step 9

Ladle the soup into bowls and garnish with freshly chopped parsley, if desired, before serving.
