Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 teaspoons instant coffee powder
  • 2 tablespoons hot water
  • 0.5 cup unsalted butter (softened)
  • 0.75 cup granulated sugar
  • 0.25 cup packed light brown sugar
  • 2 units large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup whole milk
  • 2 tablespoons powdered sugar (optional for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking pan or line it with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a small bowl, dissolve the instant coffee powder in the hot water. Stir well and set aside to cool slightly.

Step 4

In a large mixing bowl, use a hand or stand mixer to cream the softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.

Step 5

Beat in the eggs, one at a time, followed by the vanilla extract and dissolved coffee mixture. Mix until smooth.

Step 6

Add the dry ingredients to the wet ingredients in three additions, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined after each addition. Do not overmix.

Step 7

Pour the batter into the prepared baking pan and spread it evenly with a spatula.

Step 8

Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Step 9

Remove the pan from the oven and let the cake cool completely on a wire rack before slicing into 16 squares.

Step 10

Optionally, dust the tops of the coffee squares with powdered sugar before serving.
