Ingredients

  • 2 tablespoons Olive oil
  • 2 pounds Ground beef (85% lean)
  • 1 large Yellow onion, finely diced
  • 4 Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 28 ounces Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Beef broth
  • 2 tablespoons Chili powder
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 0.25 teaspoons Cayenne pepper (optional, for heat)
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 0.25 cups Fresh cilantro, chopped (optional, for garnish)
  • 0.5 cups Sour cream (optional, for serving)
  • 0.5 cups Shredded cheddar cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the ground beef to the pot and break it up using a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess grease if necessary and set the beef aside on a plate.

Step 3

In the same pot, add the diced onion, minced garlic, and diced red bell pepper. Sauté for 5-7 minutes until the vegetables are softened and aromatic.

Step 4

Return the cooked ground beef to the pot. Stir in the chili powder, ground cumin, paprika, dried oregano, cayenne pepper (if using), salt, and ground black pepper. Cook for 1-2 minutes to toast the spices.

Step 5

Add the crushed tomatoes, tomato paste, and beef broth to the pot. Stir thoroughly to combine all ingredients.

Step 6

Reduce the heat to low and simmer the chili uncovered for 25-30 minutes, stirring occasionally to prevent sticking. This allows the flavors to meld and the chili to thicken.

Step 7

Taste the chili and adjust seasonings if necessary. Add additional salt or spice to your liking.

Step 8

Serve hot with optional toppings such as fresh cilantro, sour cream, and shredded cheddar cheese. Enjoy!
