Ingredients

  • 1 lb Boneless skinless chicken breasts
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 small (diced) White onion
  • 2 minced Garlic cloves
  • 8 oz (sliced) Cremini or white button mushrooms
  • 2 tbsp All-purpose flour
  • 2 cups Chicken broth
  • 0.75 cup Sour cream
  • 1 tbsp Dijon mustard
  • 12 oz Egg noodles
  • 2 tbsp Chopped parsley

Directions

Step 1

Season the chicken breasts with 1/2 tsp of salt and 1/4 tsp of ground black pepper. Dice the chicken into bite-sized pieces.

Step 2

Heat 1 tbsp of olive oil in a large skillet or sauté pan over medium-high heat. Add the diced chicken and cook for 5-6 minutes, or until lightly browned and cooked through. Remove the chicken from the pan and set aside.

Step 3

In the same skillet, add 1 tbsp of butter along with the remaining olive oil. Add the diced onion and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Add the sliced mushrooms to the pan and sauté for 5 minutes, or until they release their moisture and turn golden brown.

Step 5

Push the mushrooms to one side of the skillet and melt the remaining tablespoon of butter in the other side. Sprinkle the flour over the melted butter and whisk until combined, cooking for 1 minute to remove the raw taste of the flour.

Gradually pour in the chicken broth while whisking to prevent lumps. Bring the mixture to a simmer and let it thicken, about 2-3 minutes.

Stir in the sour cream, Dijon mustard, and the remaining 1/2 tsp of salt and 1/4 tsp of black pepper. Return the cooked chicken to the pan and simmer for 2-3 minutes until the chicken is heated through and the sauce is creamy and well combined.

Meanwhile, cook the egg noodles according to the package directions in a large pot of salted boiling water. Drain and set aside.

Step 9

Serve the chicken stroganoff over the cooked egg noodles and garnish with chopped parsley for a fresh pop of flavor.
