Ingredients

  • 2 tablespoons olive oil
  • 2 medium (boneless, skinless) chicken breasts
  • 1 large (diced) yellow onion
  • 3 medium (peeled and sliced) carrots
  • 3 medium (sliced) celery stalks
  • 3 cloves (minced) garlic
  • 8 cups chicken broth
  • 1 cup pearl barley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 whole bay leaf
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoons (or to taste) black pepper
  • 2 tablespoons (chopped, optional for garnish) fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chicken breasts and cook for 3-4 minutes on each side until lightly browned. Remove the chicken from the pot and set aside.
