  • 12 oz Penne pasta
  • 8 oz Salmon fillet (skinless)
  • 2 tbsp Olive oil
  • 3 units Garlic cloves, minced
  • 3 cups Baby spinach
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 1 tsp Lemon zest
  • 2 tbsp Lemon juice
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta cooks, season the skinless salmon fillet with a pinch of salt and black pepper on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the salmon to the pan and sear for 3-4 minutes on each side, or until cooked through. Remove the salmon from the skillet, flake it into bite-sized pieces, and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil and the minced garlic. Sauté the garlic for about 1 minute until fragrant.
