Ingredients

  • 250 grams pasta (penne, rotini, or macaroni)
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup chicken or vegetable stock
  • 1.5 cups cheddar cheese, shredded
  • 0.5 cups parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.

Step 2

In the same pot, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 3

Sprinkle the flour over the garlic and butter mixture, and whisk continuously for 1 minute to form a roux.

Step 4

Slowly pour in the milk, whisking constantly to remove any lumps. Add the chicken or vegetable stock and continue cooking, stirring regularly, until the sauce thickens (about 3-4 minutes).

Step 5

Reduce the heat to low, and stir in the cheddar cheese and parmesan cheese until fully melted and smooth.

Step 6

Season the cheese sauce with salt, black pepper, dried oregano, and red pepper flakes (if using). Adjust seasoning to taste.

Step 7

Add the cooked pasta to the cheese sauce and mix until the pasta is completely coated.

Step 8

Serve hot, garnished with fresh parsley for a burst of color and freshness.
