  • 12 ounces andouille sausage, sliced
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 teaspoons cajun seasoning
  • 1 teaspoon smoked paprika
  • 14 ounces diced tomatoes (with juices)
  • 3 cups chicken broth
  • 1.5 cups long-grain white rice, uncooked
  • 1 pound raw shrimp, peeled and deveined
  • 1.5 cups shredded cheddar cheese
  • 2 green onions, sliced (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the sliced andouille sausage and cook for 3-4 minutes until browned. Remove it from the pot and set aside.

Step 3

In the same pot, add the diced onion, bell pepper, and celery. Sauté for 5-6 minutes until softened.

Step 4

Stir in the minced garlic, Cajun seasoning, and smoked paprika. Cook for 1 minute until fragrant.

Step 5

Add the diced tomatoes (with their juices), chicken broth, and uncooked rice to the pot. Stir well to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 18-20 minutes, stirring occasionally to prevent sticking.

Step 7

Once the rice is tender, stir in the cooked sausage and raw shrimp. Cover and cook for an additional 4-5 minutes until the shrimp are pink and fully cooked.
