Ingredients

  • 1.5 cups graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 ounces cream cheese, softened
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 pieces large eggs
  • 0 whipped cream (optional for garnish)
  • 0 fresh fruit (optional for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.

Step 2

In a medium bowl, combine the graham cracker crumbs, 2 tablespoons of granulated sugar, and melted butter. Mix until the mixture resembles wet sand.

Step 3

Spoon about 1 tablespoon of the crumb mixture into each cupcake liner and press down firmly to form the crust. Use the back of a spoon or the bottom of a small glass to flatten. Set aside.

Step 4

In a large mixing bowl, beat the softened cream cheese and 1/2 cup of granulated sugar together until smooth and creamy.

Step 5

Add the vanilla extract and eggs, one at a time, to the cream cheese mixture. Beat on low speed until just combined. Avoid overmixing to prevent cracks in the cheesecake.

Step 6

Divide the cream cheese filling evenly among the prepared crusts, filling each liner about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the centers are set and slightly jiggly.

Step 8

Remove from the oven and let the tarts cool in the pan for 15 minutes, then transfer them to a wire rack to cool completely.

Step 9

Refrigerate the cheesecake tarts for at least 2 hours, or until thoroughly chilled.

Step 10

Garnish with whipped cream, fresh fruit, or your favorite toppings before serving.
