Ingredients

  • 1 pound ground beef (or chicken, turkey, or vegetarian alternative)
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 0.25 cup water
  • 1 cup refried beans
  • 1.5 cups cooked white or brown rice
  • 6 pieces flour tortillas (large size)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 0.5 cup sour cream
  • 0.5 cup salsa

Directions

Step 1

Heat a large skillet over medium heat. Add olive oil, then ground beef (or alternative protein). Cook and crumble the meat until it is browned and fully cooked, about 6-8 minutes. Drain any excess grease if necessary.

Step 2

Sprinkle the taco seasoning over the cooked meat and add 1/4 cup of water. Stir to coat the meat evenly and simmer on low heat for 2-3 minutes until the mixture thickens slightly. Remove from heat and set aside.

Step 3

Warm the refried beans in a small saucepan or microwave-safe bowl until heated through. Keep warm until ready to assemble.

Step 4

Warm the flour tortillas on a hot skillet or microwave for 15-20 seconds to make them pliable and easy to fold.

Step 5

To assemble each burrito, lay a tortilla flat on a clean surface. Spread about 2 tablespoons of refried beans down the center of the tortilla.

Step 6

Layer on 1/4 cup of cooked rice, 1/4 cup of seasoned meat, and a sprinkle of shredded cheddar cheese.

Step 7

Top with shredded lettuce, diced tomatoes, a dollop of sour cream, and a spoonful of salsa (adjust toppings to taste).

Step 8

Fold the sides of the tortilla inward, then roll up tightly from the bottom to create a burrito. Repeat for the remaining tortillas and fillings.

Step 9

Serve immediately or wrap in foil to keep warm. Enjoy with extra salsa or your favorite dipping sauce on the side.
