Ingredients

  • 1.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.75 cup milk
  • 2 large eggs
  • 0.25 cup olive oil
  • 1 cup shredded cheddar cheese
  • 0.5 cup diced cooked bacon
  • 0.5 cup diced bell peppers
  • 1 cup chopped spinach

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 3

In a separate bowl, whisk together the milk, eggs, and olive oil until combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Step 5

Fold in the shredded cheddar cheese, diced cooked bacon, diced bell peppers, and chopped spinach until evenly distributed.

Step 6

Using a spoon or batter scoop, divide the muffin batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown on top and a toothpick inserted in the center comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or store in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to 2 months and reheated in the microwave as needed.
